Gruyére Cheese Fondue

Fondue is surprisingly easy to make at home, and the perfect sharing dish for a chilly evening. Our favourite bits and pieces for dipping are nice big cubes of Gilda’s excellent sourdough, mini breadsticks, crunchy radishes and celery sticks, and mini boiled potatoes, but get creative with your choices!

Instructions

  1. In a heavy bottomed, medium saucepan, set the wine and the lemon juice over a medium high heat and warm it until it is steaming.

  1. Gradually add the grated cheese, a handful at a time, whisking until it is all melted into the wine mixture. Be sure to pay attention to the bottom of the pan to make sure melted lumps of cheese are not gathering there!

  1. Whisk in the mustard, nutmeg and a pinch of sugar.

  1. Combine the Eau de Vie with the cornflour to make a smooth paste, then whisk it into the fondue. Continue to whisk for 10-15 minutes until the fondue has thickened to the desired consistency.

  1. Serve in warm dishes or a traditional fondue with plenty of different items for dipping.

  • 250ml dry white wine
  • juice of 1/2 lemon
  • 375g finely grated gruyere cheese
  • 1/2 tsp dijon mustard
  • pinch of grated nutmeg
  • pinch of sugar
  • 1 tbsp plum eau de vie (optional, or water)
  • 1 tbsp cornflour
  • To Serve

  • Gilda sourdough, mini breadsticks, radishes, celery and mini boiled potatoes
