Mother’s Day Chicken & Peach Salad

This recipe was recommended to us by our Wholesale & Operations Manager, Mike, who found it on the BBC Good Food website. 

  • 1 free-range chicken
  • 4 large ripe peaches or nectarines
  • 200g mangetout, thinly cut lengthways
  • 6 spring onions, finely sliced
  • 4 tbsp chopped fresh coriander
  • zest & juice of 2 limes
  • 2 tbsp clear honey
  • 2 tbsp freshly grated root ginger
  • 2 tbsp soy sauce
  • 6 tbsp sunflower oil
  • 1 tbsp toasted sesame oil


  1. First off, roast your chicken as per the instructions. Once cooled enough to handle, remove the meat from the chicken, cut into chunky strips and place in a large mixing bowl.
  2. Cut the peaches or nectarines into wedges. We like to griddle ours so they caramalise, but if preffered, you can leave them raw.
  3. Add the peaches/nectarines, mangetout, spring onions and coriander to the chicken.
  4. Put the lime zest and juice, honey, ginger and soy sauce into a small bowl and season.
  5. Slowly whisk in the sunflower oil to form an emulsion, then whisk in the sesame oil.
  6. Toss the dressing with the salad and serve!
