Mica’s Posh Dogs

A simple & tasty mid-week meal... perfect as Autumn sets in!

  • 4 large frankfurters (the ones from our deli work the best!)
  • 1 Parisienne baguette
  • 1 large red onion
  • 1 tsp brown sugar
  • Dijon mayonnaise


  1. On a high heat, add a splash of olive oil to a griddle pan.
  2. Slice along, but not all the way through, the frankfurters (one cut every centimetre). This makes them curl nicely and cook quicker.
  3. Thinly slice the red onion.
  4. Add the frankfurters to the pan so they start to sizzle. Once golden, turn them and cook the other side.
  5. Add the red onion to the pan, along with the brown sugar, making sure to keep them moving. Continue until the onions are fully caramelised!
  6. Slice your baguette into four equal portions and cut them in half.
  7. Transfer your cooked frankfurters to the rolls, along with the caramelised red onions, and serve with a dollop of dijon mayonnaise!
