Mica’s Gazpacho

Mica's take on a Spanish classic... One to enjoy on a scorching hot day!

  • 2 cucumbers, seeded & skinned
  • 1 bunch of spring onions
  • 2 orange peppers
  • 2 red peppers
  • 6 large plum tomatoes
  • A vine of yellow tomatoes
  • A vine of piccolo cherry tomatoes
  • 6 orange tomatoes
  • 3 garlic cloves
  • 1 litre of cooled chicken or vegetable stock
  • Maldon sea salt
  • Good quality balsamic vinegar


  1. Roughly chop the tomatoes, not worrying about the skin and seeds.
  2. Chop up the cucumber.
  3. Bash garlic cloves & chop the spring onions.
  4. Deseed peppers and roughly chop.
  5. Blitz all the ingredients in a blender until smooth.
  6. Strain in small quantities through a sieve, or colander.
  7. Chill & serve ice cold for a refreshing starter or between courses!
