Redcurrant & Yoghurt Lollies

Wondering what to do with all those lovely redcurrants, but don't fancy making jam? These lollies are refreshingly fruity and use up those juicy currants.

Ingredients

You could very easily swap out the blueberries or redcurrants for any soft fruits such as raspberry and blackcurrants, and you could also use flavoured yoghurt.

  • 200g blueberries
  • 200g redcurrants
  • 225ml natural yoghurt
  • 2 tsp brown sugar

Instructions

  1. In a blender or food processor, puree the blueberries along with a teaspoon of sugar and set aside.
  2. Repeat step one with the redcurrants, again adding a teaspoon of sugar.
  3. Pour each of the mixtures, alternating the red currant, blueberry and the yoghurt into lolly moulds until they are full.
  4. Next, insert a skewer into the moulds and swirl the mixture together, merging each of the layers.
  5. Gorge yourself on lollies and retain their sticks (or you could buy some), pop them into your moulds and leave to freeze overnight.
