Karen’s Banana Ice Cream

Try this super easy ice cream recipe, perfect for a quick summer dessert!

Ingredients

  • 500g tub of coconut yoghurt (try co-yo if you want to make it vegan!)
  • 5 bananas - as ripe or overipe as you like

Instructions

  1. Peel & slice up your banana and put on a tray in the freezer.
  2. Once frozen, blend the banana pieces along with your coconut yoghurt.
  3. Pour the mixture into a suitable container (plastic takeaway tubs work great) & pop into the freezer to set.
  4. Once frozen, serve topped with lots of fresh fruit on a sunny day!
