Comté and Swiss Chard Gratin

Another dish created by the wonderful Alice, and perfect for a cold, winter's day...

Serves 2 as a main, 4 as a side dish

  • 2 bunches of swiss chard (chopped)
  • 1 cup water
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter (plus extra for baking dish)
  • 1 cup low-fat milk
  • 2 tablespoons unbleached white flour
  • Sea salt (to taste)
  • Freshly ground black pepper (to taste)
  • 1/4 cup grated comté
  • 1 tablespoon wholewheat bread crumbs


  1. Preheat oven to 350F/180C/gas mark 4.
  2. Place chard leaves in a saucepan with the water and cook over a medium heat until leaves are just tender for 3-4 minutes. Drain, reserving 1/4 cup of the cooking liquid. Set chard aside.
  3. In the same saucepan, heat the olive oil and butter over a medium heat. When the butter has melted, whisk in the flour until blended. Whisk constantly for 1 minute.
  4. Slowly whisk in the milk and reserved cooking liquid. Continue cooking and stirring for 3-5 minutes or until the sauce thickens.
  5. Season with salt and pepper and stir in half of the grated cheese.
  6. Stir in the cooked chard and transfer to a buttered 9x9inch baking dish.
  7. Sprinkle with the remaining cheese and breadcrumbs.
  8. Bake for 20 minutes or until hot and bubbling.
  9. Serve immediately.
