3 Ideas For Better Breakfasts

The 24th of January marks the start of National Breakfast Week and to celebrate, we’re talking breakfast here on the blog!
We all know that breakfast is one of the most important meals of the day and it is my personal favourite. Luckily, I have no children, pets or extremely early starts to contend with (the perks of living just 15 minutes from work!), so I quite often find myself making French toast, poached eggs, bacon sandwiches etc when I first wake up.
However, a hot breakfast isn’t always realistic (or so I’ve been told by my colleagues with children), so we’ve been experimenting with some ideas that you can make in minutes before work. Here are a few to try…

The recipe is really simple. Mix a quarter cup of oats, a quarter cup of yoghurt and a third of almond milk with the fruit of your choice (we like blueberries and raspberries!) and pop in a jar overnight (8 hours minimum).
There is so much you can do to shake this recipe up. Add chia seeds, peanut butter, cinnamon, nuts or seeds. It’s also a winning vegan breakfast if you take out the yoghurt or replace it with a vegan alternative.
This is another easy breakfast, packed full of protein.
Smother wholemeal toast with almond, cashew or peanut butter (we like Pip & Nut!) and arrange a banana in slices on top. Sprinkle with chia seeds and a drizzle of honey. Breakfast on the go!
You’ve probably heard this a million times before, but classic avocado on toast is a healthy breakfast option, and really fast if you prep the avocado the night before (just mash it up with a healthy squeeze of lime and pop in a tupperware in the fridge).
Then in the morning all you need to do is pop some wholemeal toast under the grill (sourdough is amazing!) and smear the avocado on top. Add ground or fresh chilli, sea salt & cracked black pepper… and more lime if you wish. The chilli is good for kick-starting your metabolism for the day ahead and the avocado is full of good fats.
