Spring is in full swing, and with it comes an abundance of amazing produce, which is just waiting to be celebrated in the kitchen. From local asparagus to fresh peas and succulent strawberries, we're sharing five of our favourite recipes to inspire your cooking and showcase the best of this season's produce...

Pea & Mint Whipped Feta with Slow-Roasted Tomatoes

First up, a delightful dish that perfectly captures the essence of spring: Pea & Mint Whipped Feta with Slow-Roasted Tomatoes. This creamy, tangy dip is elevated by the sweetness of fresh peas and mint. Here, we pair it with slow-roasted tomatoes, but it would work equally as well alongside lamb chops cooked on the barbecue. Asparagus Tarts with Whipped Goat's Cheese

Next on our list are these Asparagus Tarts with Whipped Goat's Cheese. The ultimate Kentish veg, asparagus has a short season and is served here with creamy goat's cheese and pistachio. It's the perfect centerpiece for any springtime gathering and uses shop bought pastry to make things a little easier. Get the recipe here.

Spring Asparagus Soup

We couldn't resist including a second asparagus recipe, simply because it's just SO good. This soup is bursting with the delicate flavours of fresh asparagus and utlilises parmesan rind for some added oomph in the broth. Garnish with a dollop of crème fraîche and serve with any of the excellent breads from our bakery. Get the recipe here.

Herring Rollmop Potato Salad

For an unusual twist on a classic potato salad, try this Herring Rollmop version tossed with tangy pickled herrings and a creamy dressing. New season Kentish potatoes are the star of this simple, Scandi-inspired recipe, although we love using Jersey Royals too! Serve it as a side dish or enjoy it as a light lunch – either way, it's sure to be a hit. Strawberry & Rosé Wine Jelly

No spring menu would be complete without a sweet treat featuring local Faversham strawberries. This light and refreshing dish is the ultimate make-ahead dessert showcasing juicy Kentish strawberries and crisp French rosé wine. Perfect for those warm spring days, which are surely on their way. Get the recipe here.
